Introduction to Biryani Biryani is a fragrant and flavorful rice dish that originated in the Indian subcontinent and has become beloved worldwide. It's a harmonious blend of basmati rice, aromatic spices, and either meat, fish, or vegetables. The word "Biryani" is derived from the Persian word "birian", which means "fried before cooking". There are many regional varieties of Biryani, such as Hyderabadi, Lucknowi (Awadhi), Kolkata, Malabar, and Sindhi, each with its unique preparation style. What makes Biryani special is the layering technique and dum cooking method (steam cooking), which infuses the dish with deep flavor and rich aroma.
