Pakoda is a popular South Asian Snack

Pakoda (also spelled pakora or bhaji) is a popular South Asian snack made by deep-frying vegetables, paneer, or meat coated in a seasoned gram flour (besan) batter. Crispy on the outside and soft inside, pakodas are typically enjoyed with tea, especially during rainy or cold weather. They are often served with chutneys such as mint, tamarind, or ketchup. Pakodas are quick to prepare and are a staple in Indian street food culture, known for their rich flavor and satisfying crunch.

Basic Vegetable Pakoda Recipe:

Ingredients:

1 cup gram flour (besan)

1 medium onion (thinly sliced)

1-2 green chilies (finely chopped)

1 medium potato (thinly sliced or grated)

A handful of spinach or coriander leaves (chopped)

½ tsp turmeric powder

½ tsp red chili powder

½ tsp carom seeds (ajwain) or cumin seeds

Salt to taste

Water (as needed)

Oil (for deep frying)

Instructions:

1. Prepare the batter:

In a bowl, mix gram flour with turmeric, chili powder, ajwain/cumin seeds, and salt.

Add the sliced vegetables and mix well.

Slowly add water, little by little, to make a thick batter that coats the vegetables.

2. Heat the oil:

Heat oil in a deep pan over medium heat.

3. Fry the pakodas:

Drop spoonfuls of the mixture into the hot oil.

Fry until golden brown and crispy, turning occasionally.

Remove and drain on paper towels.

4. Serve:

Serve hot with green chutney, tamarind chutney, or ketchup, alongside masala chai.
